It's 5:47 p.m. Someone in your house has just said the four words that end every good mood: "What's for dinner?" You stare at the fridge like it owes you money. We've been there, and we've since built a small, delicious escape hatch.
Below you'll find three free recipes with every step spelled out, a few tools you can use right now, and some honest tips for making dinner less of a boss battle. If you like what you see, we also made two things that do the planning for you. No pressure. Take what helps, leave the rest.
Scrub the potatoes under water and poke each one all over with a fork. Those holes let steam escape so nothing explodes.
Put them on a microwave-safe plate. Microwave 6 to 8 minutes, flipping halfway, until a knife slides in with no fight.
While they rest, warm the beans in a bowl for 1 minute.
Split each potato down the middle. Pile on beans, cheese and salsa, and let the heat melt the cheese.
Good to know: Potatoes keep cooking for a minute after the microwave stops, so let them sit before you slice. No fresh ones? Microwave frozen cubed sweet potato in a bowl instead.
Level 2: Sheet-pan sausage and broccoli

You'll need
1 package (12 oz) fully cooked sausage, sliced into coins
4 cups broccoli florets, fresh or frozen
1 lb baby potatoes, halved
2 tbsp oil
1 tsp garlic powder, plus salt and pepper
Here's how
Heat the oven to 425掳F and line a sheet pan with foil. Foil is the whole "zero dishes" trick.
Toss the potatoes with half the oil and a pinch of salt. Spread them cut side down and roast 10 minutes. They need a head start because they're the slowpokes.
Add the broccoli and sausage, drizzle with the rest of the oil, sprinkle on the garlic powder and pepper, and toss right on the pan.
Roast 15 to 20 more minutes, until the potatoes are fork-tender and the edges look browned.

Level 3: Slow cooker salsa chicken

You'll need
2 lb boneless, skinless chicken breasts
1 jar (16 oz) salsa
1 packet taco seasoning
1 can (15 oz) black beans, drained
For serving: tortillas, rice, shredded cheese
Here's how
Spray the slow cooker or add a liner. Lay the chicken in the bottom (thawed, please).
Sprinkle the taco seasoning over the top, then pour on the salsa and beans.
Cover and cook on LOW 6 to 7 hours, or HIGH 3 to 4 hours, until the chicken reaches 165掳F in the thickest part. Keep the lid closed. Every peek adds about 20 minutes.
Shred it with two forks right in the pot and stir it back into the sauce.
Serve in tortillas, over rice, on a baked potato, or straight from a spoon at the counter. We won't tell.

Heat the oil in a large skillet over medium-high heat. Add the frozen vegetables and cook 2 to 3 minutes, stirring.
Push the vegetables to one side. Pour the eggs into the empty space and scramble until fully set, with no runny bits.
Add the rice and break up any clumps with your spoon. Cook 3 to 4 minutes, until hot and just starting to crisp.
Splash in the soy sauce, toss everything together and top with scallions.
Good to know: Cold rice fries better than fresh, because fresh rice turns gummy. Leftover rice from last night is the secret ingredient.
Pantry tomato pasta with white beans and spinach

You'll need
12 oz pasta
1 jar (24 oz) marinara sauce
1 can (15 oz) white beans, drained and rinsed
2 cups baby spinach, or 1 cup thawed frozen spinach
Parmesan for the top
Here's how
Boil the pasta in salted water according to the package. Scoop out 1/2 cup of the pasta water before you drain.
Return the empty pot to the stove over medium-low heat. Add the marinara, beans, spinach and a splash of pasta water.
Simmer 3 to 4 minutes, until the spinach wilts and the beans are hot.
Stir in the pasta, toss to coat and top with parmesan.
Good to know: Beans add protein and make one jar of sauce feed more people. Frozen spinach is cheaper than fresh and works just as well here.
Three stretch tricks
Buy the big bag, then portion it. A large bag of rice or pasta costs less per serving than small boxes.
Add beans, lentils or eggs. They stretch meat dishes and make meatless nights feel like real dinner.

What does dinner really cost?
Total cost of the ingredients, divided by servings. That's it. It's just a math problem.
One chicken, three dinners
Leftovers don't have to be the same dinner again. Start with one rotisserie chicken or a batch of slow cooker chicken and remix it. More ideas: leftover chicken recipes.
Night 1: Chicken plate. Serve with rice and steamed or microwaved vegetables.
Night 2: Quesadillas or wraps. Fold shredded chicken, cheese and salsa into tortillas and crisp in a skillet 2 to 3 minutes per side.

You'll need: 12 oz rotini or penne, 1 jar (6 oz) pesto, 1 cup cherry tomatoes (halved), 1/2 cup grated parmesan. Optional: 2 cups shredded rotisserie chicken.
Boil the pasta in salted water per the package. Scoop out 1/2 cup of pasta water, then drain.
Return the pasta to the pot off the heat. Stir in the pesto and a splash of pasta water until creamy.
Fold in the tomatoes, chicken and parmesan and serve.

Cook in a dry skillet over medium heat 2 to 3 minutes per side, until golden and the cheese melts.
Slice into wedges and serve with salsa.
Good to know: Mashing some of the beans acts like glue and keeps the filling from sliding out.
